The battle is on!

Ughhh...The sickies have made it to our home!  All I want to do is run for cover or put on a gas mask and pray no one coughs, wipes their nose on me or sneezes in my face! Haahhaaa! Such wishful thinking for mommy of three! There's not even the slightest chance I won't at least get sneezed on or have someone wiping their buggers on my shirt. Hey! That’s life when you have little kids. And expecting to have beautiful tops that don’t look like condors eliminated all over them is everyone woman’s dream, but not necessarily a reality! Oh, and how I’d love to wear beautiful clothing on a regular basis. But for now, I’ll settle for my t-shirts, yoga pants and the occasional dress up moment for a special outing. Fancy clothing will have to wait for this Momma, because I don’t get a lot of time to mess around with being ultra-stylish. Love this! It really is true. It's not always easy to shift our perspective when we're in the thick of it! Life can be HARD and it's easy to get caught up in fear, anger and staring at all the problems we face. But, by changing the way we think-- for the better  😄 ! Family Friendly Stir-Fry

Chicken & Shrimp Stir-Fry Ingredients: 2 chicken breasts, sliced into small chunks 8-16 med to lrg shrimp, peeled and deveined 1-2 carrots, sliced thin 12 snap peas 1 cup beam spouts (optional) 2 scallions, diced 1" sliced raw ginger, diced or 1 tsp ground ginger 1-2 garlic cloves, minced or 1 tsp garlic powder 1/4 cup Bragg's Amino's or Tamari 2 cups Soba noodles or rice noodles (prepared) 2 TBSP peanut oil or olive oil Directions: 1. Heat oil in skillet or wok. 2. Cook carrot, chicken, ginger and garlic on med heat. You can also add in broccoli or any other veggie you like. Saute until tender. 3. Add Bragg's Amino's, shrimp, peas, sprouts (optional), scallions and cook until shrimp is pink or cooked through. 4. Add precooked Noodles and toss. 5. Add a little of your noodle water into pan to help thicken up the sauce. Continue tossing with prepared soba noodles until everything is mixed together. 6. Serve and add a little more Bragg

Little kids be CRAZY!

Before you stop to judge me over what you're about to read, I actually do in fact watch my kids. ;) As parents we all have those days were we fall down, make mistakes, lose track of why we walked in a room, yell at the wrong kid, use the wrong kids name and miss little things like I did today. So with that said, "His grace is sufficient for me", and I'll dust myself off and be watching this little one like a hawk, because she gets into WAY more mischief then our other two darlings. Okay! I just have to ask...why do little's have to put EVERYTHING in their mouths??? I know scholars say it's because that's how they learn. However, some part of me believes our kids do it out of shear fear factor to torture us! I think the little's have a plot to see how far they can push Mom and Dad before they absolutely f-r-e-a-k out!! LOL!  I mean take little #2 for example. How to get your kids to eat healthier!

The best way I know of getting the kids to eat healthier is to have them help you prepare the food! Egg muffins are a super simple meal to make, and an easy way to get the kids involved too! All you have to do is cut up your toppings, lay them aside and mix the eggs. Once you're done mixing the eggs (I recommend the adult do this if the kids are little), add the egg mixture to the muffin tin evenly, and then have the kids sprinkle in the toppings. Easy peasy! In this recipe we used 12 eggs, added 1/4 cup onion, 1/2 cup tomato and 1/2 cup shredded cheese. Bake @ 375° for 20 minutes. I'm so proud of Miss K for helping me make these today! 💕 She did such a great job helping! And once they were done she was super excited to chow down on the fruits of her labor.

Apple Energy Bites RULE!

Awesome Recipe ⤵⤵⤵ Cinnamon Apple Energy Bites: Ingredients: 1 real apple peeled and cut into slices 8-10 figs (pull out the seed and let them soak in warm water for 10 min) 1 cup oats 1 cup almond meal 10 almonds 1/2 TBSP of Organic Maple Syrup 2 TBSP water (I used the fig water) 1 tsp cinnamon 1/4 tsp or less of all spice or apple pie spice Directions: Toss all ingredients into a blender. Blend until it all ingredients make a paste. Roll into balls. Let set in the fridge. Kid approved!!

Turkey Sloppy Joes

Recipe time! This is so delicious and CRAZY simple to make! Ingredients: 2 lbs organic ground turkey meat 1-2 cups organic Original BBQ sauce ( I used Simple Truth Original BBQ from Kroger) 1 bundle of large leaf lettuce Directions: 1. Cook turkey meat on med heat until almost cooked through. Break any large pieces into small ones. 2. Add BBQ sauce and mix well. 3. Continue cooking over low-med low heat. Stiring occasionally for about 5-10 min. 4. Set on low for 2-5 min to help thicken sauce. 5. Clean lettuce leaves. 6. Spoon out sloppy joe mix onto large lettuce leaves or whole wheat toast.
