Sweet Potato Quinoa Cupcakes

I am so pleased that I got over my fear of baking with Quinoa! I'm not sure what held me back? It was probably because I just didn't want a screwed up a batch of muffins and have to throw them in the trash! If you haven't ever baked with it, you will be very happy with how even it bakes. The texture remains soft, and it still holds it's shape. Unlike regular wheat, that tends to crumble. The taste is really good too! You would never know it was Quinoa.
